Thermodyne does not use re-circulated air, so you can hold crisp or moist products in the same cabinet at the same time. Foods can be held significantly longer while retaining high quality, colour and texture, as if suspended in time. The Fluid Shelf® system keeps the heat source in constant motion, ensuring that the transfer of heat directly to your foods via conduction is the most energy and time efficient process over traditional convection models. At the same temperature, heat is transferred 30 times faster through through conduction as opposed to convection.

 

The result of this efficient heat transfer is that Thermodyne countertop units can be purchased with or without doors, and are equipped with our patented built-in pan covers delivering quick serving access without compromising other products’ temperatures. How Thermodyne Works

Inside the Thermodyne cabinet, the heat transfer fluid is heated to your desired temperature in a heater tank sited in the top of the unit. The heated fluid travels through the inside of the shelves in the cabinet, going back to the tank to recover temperature and it is continually circulated throughout providing exact temperature distribution to your food.

 

Your food is heated by touching the heated shelf, and this “conduction method” transfers heat molecule by molecule of your food. This patented method of low temperature heat transfer not only maintains the exact temperature but also preserves your foods natural moisture and flavour without overcooking or drying out.

Thermodyne precision temperature hot-holding and cooking units are produced and supplied to the UK by the US company Thermodyne Foodservice Products, Inc., which was founded in 1987. It developed a  revolutionary method of heat transfer in the late 1970’s where R&D began to seek out a better method of transferring heat to food products and maintaining food quality for extended periods of time, after it was cooked. The focus, and outcome, of the Thermodyne technology was two fold:

 

  • Transferring heat at an exact temperature without exceeding it at any time using conduction cooking.
  • Developing an efficient conduction cooking method suitable to the foodservice industry to decrease the usage of damaging high temperatures.
