Challenge

After experimenting with wedding functions, Hall and Woodhouse invested a significant amount of money in the Moat to refurbish and equip it to meet demand. They where concerned that serving 120 people a three-course meal in only an hour would lead to a chaotic kitchen. We knew that Thermodyne cook and hot holding cabinets could help.

Solution

The Moat’s first Thermodyne 700NDNL unit was put to work doing what it does best – providing a holding area to allow meats to rest, juices to settle and flavours to spread. This allows chefs in the kitchen to keep their attention on other duties, without worrying that meat will dry out or overcook.

 

Having recently been refurbished, the restaurant then purchased another Thermodyne unit help meet increasing demand, and reduce waiting time for dishes. Now hosting large functions as a popular wedding reception venue – the additional Thermodyne allows the chefs to reach covers they could only hope to achieve with a full suite of staff.
